Throughout his working life, Chef Dennis Huwaë was mostly at the helm of 2 Michelin** star kitchens. He very much enjoyed working at this high level, but he decided he would enjoy it even more without the solemn atmosphere and rigid service often found at these restaurants. He was looking for a place where anyone would feel welcome and at ease. He wanted to create an accessible restaurant, low key, but with an extremely high level of quality. He found this place in Restaurant Daalder and has been chef and co-owner since 2016.

"The dishes are all beautiful combinations that are often presented amusingly. Take the amuse-bouche alone: meringue of sushi rice with roasted salmon and a ponzu lacquer. That is very promising! We also fell in love with the mackerel, ajo blanco, green apple and miso starter. This chef is clearly developing his own style that will undoubtedly become even more pronounced in the coming years. Last year he was named Talented Chef of the Year. We remain convinced: we will hear a lot from this chef. "

Daalder’s fantastic kitchen team is headed by patron-cuisinier, Dennis Huwaë. He challenges his team to constantly raise the bar – as if cooking were an elite sport. One could argue not much has changed for Huwaë since his 2-star days in that sense.
For him, the creation of the perfect dish still remains a quest for the ideal combination of ingredients that reinforce and complement each other perfectly. He is so committed to creating the perfect new dish that he, in his own words, looks for the ‘inner beauty' in every ingredient and wants to bring out the best in each of them.

A TEAM WITH A MISSION
Every year the 100 best chefs in the world are named by The Best Chef Awards. The chefs are mainly chosen by the culinary top themselves. Then the colleagues assess each other on the basis of their personality, talent, experience and growth. The 100 chefs with the highest scores will eventually be included in the Top 100 of The Best Chef Awards 2020.
Last year Dennis was very happy with a place in the top 100, but this year he took 64th place. “I am very proud and feel a lot of appreciation for me as a person and for what we are doing with Daalder. It is an amazing performance by the whole team.” Says Dennis Huwaë.
