We develop our menu in Daalder Atelier. Our restaurant on the Lindengracht in the Jordaan. The place where it all started for us.

The Atelier is open to guests a few days a week. In the Atelier you will always find the newest ideas first on the menu. Here we push the limits of what is culinary possible.

The table is filled with tasty streetfood dishes from Dennis Huwaë while you take a sip of the sparkling Crémant in your hand. Daalder has a spacious terrace on the water and is open for walk-ins. You read that right, you don't have to book in advance. Hop along and settle down on one of the finest terraces in Amsterdam west. With the likes of Smash Burgers, Moluccan-inspired Fried Chicken and the Mona Lisa Gnocchi, you are in the right place for tasty bites, but also a good filling dinner dish.

Daalder’s fantastic kitchen team is headed by patron-cuisinier, Dennis Huwaë. He challenges his team to constantly raise the bar – as if cooking were an elite sport. One could argue not much has changed for Huwaë since his 2-star days in that sense.
For him, the creation of the perfect dish still remains a quest for the ideal combination of ingredients that reinforce and complement each other perfectly. He is so committed to creating the perfect new dish that he, in his own words, looks for the ‘inner beauty' in every ingredient and wants to bring out the best in each of them.
