With the Daalder Experience, Chef Dennis Huwaë and his team take you on a journey through his culinary masterpieces and surprises you with a creative and innovative 5 to 8-course tasting menu. To enhance the flavor experience of the dishes, our sommelier has curated a wine pairing that perfectly complements the menu. For those who prefer, we also offer the Bob arrangement or the soft pairing. It is also possible to choose dishes à la carte alongside the Daalder Experience.

TIVOLI GARDENS DAALDER POP-UP
At the invitation of Tivoli Gardens, the Daalder team can be found in the Japanese Pagoda of the theme park in Copenhagen. From the 13th of October to the 6th of November, Chef Dennis Huwaë and team will organize a pop-up there. In the meantime, Daalder in Amsterdam will remain temporarily closed. Currently, there's an Asian trend in the Copenhagen restaurant scene, which perfectly matches the Asian influences in Daalder's menu.
Dennis Huwaë is already looking forward to the trip to Denmark:
“In my eyes, Copenhagen is the culinary Mecca of Europe. I’ve been here multiple times over the last couple of years and have taken a lot of inspiration from the culinary scene in Kopenhagen. I think it's fantastic to be able to cook in this city and give the people of Denmark the chance to get to know my style of cooking. I now hope to be the chef who provides inspiration and to add something to this fantastic culinary scene.”

Now, we welcome Daalder, which represents a different direction. More free-spirited and undogmatic, they engage in wild things and combinations in their kitchen. But despite the informal atmosphere, make no mistake. Dennis Huwaë creates Michelin-class cuisine with amazing flavours, and nothing is left to chance on his plates. It’s top-league Asian-inspired gastronomy, and it’s fun, different and unlike anything you’ve tried before.”

DAALDER STREETFOOD
Next to the fine dining terrace of Restaurant Daalder, located by the water of the Postjesweg, you will find the Daalder Street Food Terrace.
Here, chef Dennis Huwaë does things completely differently. Different, but no less sublime.
During his many travels to Asia, South America, and Mediterranean countries, Michelin-star chef Dennis Huwaë enjoys eating at street food stands. These flavors serve as his inspiration when creating his fine dining dishes, which makes Huwaë unique among star chefs.
Here at the Daalder Streetfood Terrace, Huwaë does things completely different: street food is served, but prepared with the techniques and refinement of his fine dining dishes. What happens next is brilliant; you'll be blown away by his Muku Fried Chicken, the double patty Smash Burger, or Dennis' take on Flammkuche; Tarte Flambé with fresh tuna.
On this spacious terrace, you can indulge in the tastiest bites or enjoy a complete dinner. Or perhaps you're just looking to cool off by the water and have a drink? You are welcome to enjoy our champagnes, wines, spritz, cocktails, or a freshly poured beer. There's plenty of refreshment for all the hot days in Amsterdam. Did someone mention ice cream? We've got you covered because Dennis Huwaë's (now world-famous) stroopwafel ice cream is waiting for you.
We are open every day from 3:00 PM. and the best part is that this expansive terrace by the water on Postjesweg is open for walk-ins. That's right, you don't need to make a reservation in advance when you visit us.

Daalder’s fantastic kitchen team is headed by patron-cuisinier, Dennis Huwaë. He challenges his team to constantly raise the bar – as if cooking were an elite sport. One could argue not much has changed for Huwaë since his 2-star days in that sense.
For him, the creation of the perfect dish still remains a quest for the ideal combination of ingredients that reinforce and complement each other perfectly. He is so committed to creating the perfect new dish that he, in his own words, looks for the ‘inner beauty' in every ingredient and wants to bring out the best in each of them.
